Guillaume began his career at Boston Consulting Group, where he worked  on major transformation programs and due-diligence assignments across multiple sectors. He later joined Napaqaro (Buffalo Grill, Courtepaille and Popeyes), backed by TDR Capital, where he served as Head of Strategy and sat on the Executive Committee. Guillaume joined the Elyan team in 2022.
